There to do a tasting for one dish, I ended up eating more than I had planned because the PR Director very nicely arranged for lunch as well (because the art director, photographer and myself were there during lunch time). Our stomachs were really pampered by Chef Chan Kwok&#8217;s mastery of Cantonese food.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5289\/5250429222_2740ddba5d.jpg\" width=\"500\" height=\"334\" alt=\"_MG_1275lores\" \/><\/a><\/br><br \/>\nKung Fu Soup \u529f\u592b\u6e6f (photo courtesy of Hua Ting)<br \/>\nAbsolutely loved this Kung Fu Soup that is double boiled using pork, red dates and <i>dang gui<\/i> as its main ingredients. The Kung Fu Soup changes every season and as it&#8217;s the end of the year when the weather gets cooler, Chef Chan has included <i>dang gui<\/i> as it&#8217;s a Chinese herb that helps warm the body. Serving the soup from a tea pot and a small tea cup helps to maintain the soup&#8217;s temperature and keep it warm for as long as possible.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5088\/5250434660_414091d53b.jpg\" width=\"500\" height=\"333\" alt=\"\u8106\u76ae\u70e7\u9e2d  Crispy Roasted Duck\" \/><\/a><\/br><br \/>\nCrispy Roasted Duck \u8106\u76ae\u70e7\u9e2d   (photo courtesy of Hua Ting)<br \/>\nThe two pieces of duck skin we had were nicely roasted and crispy to the bite while the duck meat was tender and still moist. Accompanying our serving of roasted duck were two tiny pieces of roast pork \u71d2\u8089 which had really crispy crackling.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5241\/5249829359_2678751895.jpg\" width=\"333\" height=\"500\" alt=\"\u714e\u5e26\u5b50\u6252\u7fe0\u7eff\u8c46\u8150\u65f6\u852c  Braised Homemade Emerald Beancurd with Seasonal Greens topped with Pan-Fried Scallops\" \/><\/a><\/br><br \/>\nBraised Homemade Emerald Beancurd with Seasonal Greens topped with Pan-Fried Scallops \u714e\u5e26\u5b50\u6252\u7fe0\u7eff\u8c46\u8150\u65f6\u852c  (photo courtesy of Hua Ting)<br \/>\nWe love the taste and look of the Emerald Beancurd which is made by putting spinach and soya bean milk together in a blender and then putting the mixture to set. When put to set, the spinach bits automatically float to the service which is why there is a darker green colour in this tofu. The scallops, topped off with fish roe, were also huge, fresh and succulent.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5168\/5249830253_50988332e2.jpg\" width=\"500\" height=\"333\" alt=\"\u9999\u8305\u70ac\u6392\u9aa8  Baked Pork Ribs with Lemon Grass\" \/><\/a><\/br><br \/>\nBaked Pork Ribs with Lemon Grass \u9999\u8305\u70ac\u6392\u9aa8 (photo courtesy of Hua Ting)<br \/>\nSlicing through a tender pork rib and having it fall away from the bone on a single cut could be said to be one of life&#8217;s simple pleasures. These pork ribs were baked to perfection with the outside achieving a crispy and flavourful outer layer while the meat outside was infused with the fresh smells of lemongrass.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5043\/5250434124_f229db4167.jpg\" width=\"333\" height=\"500\" alt=\"\u8106\u76ae\u8354\u8338\u9165  Deep-Fried Yam Pastry\" \/><\/a><\/br><br \/>\nDeep-Fried Yam Pastry \u8106\u76ae\u8354\u8338\u9165  (photo courtesy of Hua Ting)<br \/>\nI&#8217;m a sucker for anything to do with yam (aka taro) and I couldn&#8217;t resist this yam pastry dessert. The flaky pastry is fresh and crisp and the yam filling was smooth and tasty. A must-try for all yam lovers.
