The one I made is probably one of the simplest versions. Others I have come across online had cut and arranged the vegetables into pretty slices. I don&#8217;t have the luxury of time so all I did was diced my onions, eggplant, and red and yellow bell pepper. I seasoned with salt and freshly ground black pepper and left the stew to cook overnight in a thermal cooker.
