
A few weeks ago I went to the Hyatt Sha Tin to visit my friend F who introduced me to this delightful cheesecake that cleverly marries Chinese fermented beancurd (腐乳) and cheesecake. I know it sounds weird, but those who know food will know that this combination works – such a stroke of brilliance by the chef at Sha Tin 18!
Cut to resemble the cube-like 腐乳, the faint salty flavour from the 腐乳 adds more dimension to this light cheesecake’s taste. Think seasalt caramel – same concept. The red wolfberry (枸杞) on top not only makes the cheesecake look more attractive, but also adds a slightly sweet and sour taste.
Definitely worth the calories!
