While the autumn days are still warm enough for salads, for lunch today I made a fusili pesto salad with baby spinach, quinoa and roasted pine nuts.
I had actually boiled the pasta, roasted the pine nuts and mixed them together with some leftover quinoa (used for a previous dish) and the pesto sauce last night. When I woke up this morning I then washed the baby spinach and added them to the mix.
A simple, healthy meal made within 30 minutes in total. I need to find more of such simple and quick recipes!
