I put together this salad about a month ago on a really hot day. It was the perfect day to munch on this trio of ingredients with the juicy, cool watermelon, the refreshing mint, and the soft and salty feta cheese. But now that the hot and humid days are giving way to cooler weather, I’ll revisit this salad combination again next year!
