I made quiche for the very first time last night! It’s something that I’ve been wanting to attempt for a long time and finally got round to doing it. I had to buy a baking tin for it as I didn’t have a dish that was deep enough.
Instead of milk or cream, I decided to use creme fraiche instead to give a lighter flavour. However I didn’t have a proper whisk so I couldn’t mix it in properly with the eggs, so I ended up with some creme fraiche lumps.
For the crust I used puff pastry which I bought from the supermarket. I prefer shortcrust pastry but none were found in the supermarket and I didn’t have time to make it from scratch.
Onions, green capsicum and cherry tomatoes were the three vegetables I included. I had sauteed the onions and capsicum in butter, salt and black pepper before putting it to bake with the eggs.
A passable maiden effort, but the inside of the quiche was a bit too watery. I had probably added too much creme fraiche or just didn’t mix it in well. I liked the taste of the baked cherry tomatoes as it gives a slightly tart taste.
The great thing about quiche is the myriad varieties you can make. I will definitely be trying my hand at it again with different ingredients!
