My successful first attempt at making cashew nut butter! I decided to try making it myself cos I found the ones in super markets too expensive. And hey, it’s always fun to teach myself something new.
Here’s how I did it:
1. Roast the raw cashew nuts in an oven until they are golden brown.
2. Take them out of oven and pound them with a mortar and pestle to as small a bit as possible.
3. Put the pounded chestnuts in the blender. Add some neutral tasting oil (I used corn oil) and salt. Blend until it becomes a smooth paste.
You could use honey in place of oil and omit the salt if you prefer a sweet butter. I wanted a savoury one this time so decided on the salt instead. I spread the butter on toast this time, but I’m thinking it can also be used as part of a salad dressing. Any other ideas, anyone?
