Today I discovered the delight of making caramalised pecans! Ah, the joy of seeing maple syrup gurgling like molten gold, coating pecans that are flavoured with dashes of cinnamon and a pinch of salt. Together with melted butter, the aroma of sugar crystals that are caramalising slowly as the fire does its work is just so comforting. Definitely going to be a snack I’m making regularly for myself henceforth.
