I have decided to start a category in my blog called ‘Simple pleasures’ for the little things in life that delight me. It will be like some kind of pet project and will serve as a way to remind myself – and hopefully others – of the things I should be thankful for. It’s because too often I find myself thinking about what I don’t have rather than what I do. And then I end up feeling miserable. So this is my way of encouraging myself and making myself a happier person. Today’s simple pleasure was this:

I love how the yolk runs the moment a poached egg is poked by a fork. I love eating runny eggs and love how the English muffin on which my eggs benedict sits soaks up all that golden liquid.

Eggs benedict is always my number one choice for Sunday brunch. There’s something so comforting about it. The ones I had today were all the more delicious because they were what I had “rewarded” myself with after a two-hour hike that included lots of steps.

Anyway I always enjoying poking the egg and seeing the yolk burst forth and ooze out. 🙂
