One of the things I love about cooking are the aromas my nose gets to enjoy when the cooking process goes right. This morning before I went to work, I roasted some pine nuts to be put into the fusili pasta pesto salad I was making. I had baby spinach, grated cheese and grated carrot in the pasta and seasoned with black pepper and lemon juice.
Anyway I love the aroma that whiffs through the air when roasting pine nuts, which happens to be one of my favourite nuts. That nutty, earthy smell is such a joy to start the day! TGIF!
