Black Bean & Broccoli Fried Rice

Making use of all parts of the black bean – no wastage!

This morning I worked with black beans, an ingredient I was using for the first time. Last night I soaked some black beans and used them to make black bean soy milk this morning for breakfast. Another to add to my list of homemade drinks!

Reading up on black beans online, I learnt that they are a good source of protein, fibre, carbohydrate, folic acid, magnesium, potassium and iron. What a power packed bean! I’ll have to eat it more often now.

Using some leftover white rice in the fridge, I then cooked fried rice with the remaining pulp, adding onions, garlic and some broccoli for a meal full of hearty and healthy goodness!

PS: It’s a super cheap meal to concoct too!
