The word ‘ratatouille’ comes from Occitan ‘ratatolha’ and the recipe comes from Occitan cuisine. The French ‘touiller’ means to toss food. (source: Wikipedia)

Another dish I was keen to try my hand at was the traditional French vegetable stew , ratatouille. The one I made is probably one of the simplest versions. Others I have come across online had cut and arranged the vegetables into pretty slices. I don’t have the luxury of time so all I did was diced my onions, eggplant, and red and yellow bell pepper. I seasoned with salt and freshly ground black pepper and left the stew to cook overnight in a thermal cooker. The next day, I made some couscous to serve with it and was pleased at how the ratatouille turned out.
