A good way to make use of herbs that are about to come to the end of their shelf life, I’ve realised, is to dump it to bake with salmon. I had some parsley and Thai basil I wanted to use up, so I put it all to bake with the salmon together with some lemon zest and a slice of lemon. I also seasoned it with salt and freshly ground pepper and served it up with some garden salad. Another easy meal to put together!
