Gnocchi in Aglio Olio Sauce

Gnocchi can also be made from eggs and cheese

Ah, how can one not like gnocchi? Those little yellow fluffy pillows of potato and flour are absolutely adorable and taste fabulous to boot!

Today’s brown bag is gnocchi with red and green bell pepper in aglio olio sauce. I had done the prep work for the dish last night – mincing garlic and dicing the peppers at about 11plus. This is how I manage to put things together in the morning and still get to work on time!

Here’s what I cooked it:

1. In a pot or saucepan, put the minced garlic, chopped onions, dried thyme, rosemary, salt, and cut fresh chilli to cook in olive oil over a low fire for about 15 minutes. I just guesstimate how much olive oil I will need to coat all my ingredients and pour in that amount.

2. In another pot, boil some water with salt added in it. When the water boils, put the gnocchi in to cook for about two minutes. Remove gnocchi from pot.

3. When the onions are cooked, toss in the diced peppers and gnocchi. Season to taste with salt and freshly grounded black pepper.
