Green Curry

It’s amazing how ready-made sauces that are so widely available these days can make decent cooks out of not-so-decent cooks like myself. Hey, by not-so-decent, I don’t mean I’m The Naked Chef. That honour belongs, or rather belonged to Jamie Oliver until he fell out with BBC who used to produce that cooking series. That series is now defunct. Now his cooking show is called Oliver’s Twist which is also a very good watch. A feast for the eyes.
But I digress. This is about moi and not Jamie Oliver. He has enough fame of his own. He’s not going to usurp MY column. ;p
I had some friends over for dinner last night ‘cos my uncle and his family are away in Canberra. They’ll be back tonight. It was a pot-luck thing, so my friends brought some food. Thanks to asia@home‘s Green Curry Paste, I managed to whip up some pretty good (if i may say so!) green curry chicken. I added red capsicum, mushrooms, broccoli and bamboo shoots just to make it more like a one-meal dish.
All these read-made sauces are so good, ‘cos it can provide so many cooking ideas. Plus it’s all so easy to prepare the dish. I just bought chicken, the vegetables and some coconut milk. I got home, chopped the vegetables and chicken (best to use chicken thigh!), and basically just dumped everything into the pot to cook. Tip: Add the vegetables much much later. I knew I had to add the vegetables later, but I still overestimated the time it took to cook. So the broccoli ended up overcooked – the mark of a bad cook!
There were 5 of us. There was as much main course as there was dessert. We were like stuffed turkeys at the end of the night and still there were leftovers!
It’s lunchtime for me now. Am going to reheat the curry for lunch. Bon appetit!
