This was a simple dinner I put together for myself one night. I always keep some mock meat in my freezer as it’s something fast and easy to cook. I get these mock “lion head” balls (素獅子頭) from Citysuper and what I like about it is that it has bits of water chestnut in it.
I tossed them together with my baby asparagus, which was seasoned with olive oil and freshly ground pepper. Served that with some eight-grain rice and voila, my one plate meal! Easy peasy!
