Traditionally, kimchi was prepared by letting it ferment in jars that were stored underground.

Today’s breakfast was a East-West fusion of kimchi and grated cheese (a mix of mozzarella, parmesan, cheddar and romano) on wholewheat toast; a recipe I got from a cookbook. Weird but workable.
